I haven't done one of these in a while, and my garden (indoors this year) is growing well, so here I am. No Echinacea, tho. Basil and some houseplants. Wish I had tomatoes. I always grow great tomatoes, so long as there's no gophers or ground hogs or rabbits. Tomatoes are very Echinacea-like, I think. They have that trendy lycopene or something like that in them.
I just love tomatoes and basil, oh, and this recipe for Heirloom Caprese... that and gazpacho. I was going to make some gazpacho the other day too...
Slice up a bunch of Heirloom tomatoes
Slice up a couple of fresh mozzarella balls
Wash and dry some fresh basil leaves
You layer all this stuff in a nice flat pan or plate with a rim. Shingle them, my recipe says.
Drizzle with... this stuff below in a mixture
About 3 tbs of extra virgin olive oil
4 tsp of lemon juice
2 tsp of Chardonnay
Season with salt and freshly ground pepper to taste.
Let it sit about 10 minutes or so before serving.
There you go! Better than Echinacea!
